Awadh cuisine is characterised by kebabs and biryani. The dum biryani has fragrant rice with herbs and vegetables, while Lucknawi biryani seasons the lamb with saffron and a trotter broth. Kebabs are plentiful with duck being a relatively rare alternative and a pungent scent of herbs, spices and marinades on the food. Whether opting for a curry with cottage cheese and pumpkin gravy, stuffed potatoes with tomato sauce or lamb shank morsels with caramelised onion, ginger and turmeric the flavours are diverse and traditional.
